- 225 g milk chocolate,
- 1 jar of homemade spread,
- 3 whole eggs + 2 yolks,
- 220 g caster sugar,
- 85 g flour,
- 6 egg whites,
- 50 g hazelnuts,
- 2.5 cl sunflower oil,
- 5 g soft butter.
Preparing the chocolate hazelnut log roll
- Prepare the baking sheet: place a sheet of buttered parchment paper on a baking sheet.
- To make the glaze : melt the chopped chocolate in a bain-marie. Then prepare another bain-marie. In this one, soften the bain-marie spread which will be used to coat the cookie.
- In a mixing bowl, whisk together the egg yolks, whole eggs and 135g sugar until the mixture rises (use an electric mixer). Then add the flour and set aside.
- In a second bowl, beat the egg whites until stiff with the remaining sugar (85g). Gently combine the two ingredients.
- Preheat the oven to 210°/th. 7. Chop and roast the hazelnuts for a few minutes in the oven.
- Then pour the dough onto the buttered baking sheet, spread into a rectangle with a spatula, and bake for 5 minutes.
- Take out the cookie, let it rest for 1 minute, then turn it out onto a damp cloth. This will preserve the softness of the cookie.
- Trim the edges of the cookie to form a neat rectangle.
- Top with warmed spread, then roll up the cookie loosely so as not to break it!
- Add the hazelnuts and oil to the melted chocolate for the glaze and mix.
- Pour the glaze over the roll and chill for up to 30 minutes.
- Serve the roll on a platter and it’s ready! All you have to do is decorate it with a few Christmas trees!
