- 1 ripe melon
- 200 g cooked and shelled langoustines
- 1 cucumber
- 1 small shallot
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- A few fresh mint leaves
- Salt and pepper to taste
A quick, easy and nutritious recipe!
To begin, peel the melon, remove the seeds and dice finely. Reserve a few cubes for decoration. Cut the cucumber into small cubes, also reserving a few cubes for decoration.
In a bowl, combine the diced melon, cucumber and langoustine. Finely chop the shallot and fresh mint, then add to the melon and langoustine mixture.
In another small bowl, prepare the vinaigrette by mixing lemon juice, olive oil, salt and pepper. Pour the dressing over the melon, langoustine and cucumber mixture. Toss gently to coat all ingredients.
Divide the mixture between the verrines. Decorate each glass with a few cubes of melon, cucumber and a mint leaf.
Chill the verrines in the fridge for at least 30 minutes. Serve the melon, langoustine and cucumber verrines chilled as an appetizer or as an aperitif!
