How about cooking French fries in a different way? Forget potatoes, these 3 vegetable recipes are as original as they are tasty.

While potato fries are undoubtedly one of France’s favorite dishes, with an annual consumption of 14 kilos per person, vegetable fries have never been so popular.

This culinary trend is not only original, it’s often healthier and more nutritious than traditional French fries (especially when they’re industrial fries)!

Fried onions

Ingredients for 4 people :

  • 2 large onions
  • 3 tablespoons wheat flour
  • 3 tablespoons semi-skimmed milk
  • 1 pinch Paprika
  • Olive oil
  • Salt
  1. After peeling the onions and cutting them into 5 mm-wide slices (take care to separate the different layers of the onion without distorting the slices), set them aside.
  2. Pour the milk into a bowl and add the salt.
  3. Mix the flour and paprika on a plate, then dip the onion rings quickly into the mixture.
  4. Once floured, heat 1cm of oil in a frying pan and fry the onion rings. They should be golden brown.
  5. Place on absorbent paper to soak up the oil, season with salt and serve.

Parsnip fries

Ingredients for 4 people :

  • 2 parsnips
  • 2 tablespoons olive oil
  • 1 tablespoon acacia honey
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon chopped flat-leaf parsley
  • Salt and pepper
  1. Preheat oven to 210°C.
  2. After finely chopping the parsley, wash and peel the parsnips, then shape into large French fries.
  3. Place on absorbent paper and dry before placing in a large salad bowl.
  4. Mix the olive oil, honey, spices, parsley, salt and pepper in a bowl, then coat the parsnip fries with the mixture. They should be well coated. Stir well with your fingers.
  5. Arrange the French fries on a baking sheet lined with parchment paper. They should be evenly distributed.
  6. Bake for 15 to 25 minutes at 210°C, then serve hot.

Zucchini fries

Ingredients for 2 persons :

  • 2 small, fairly firm zucchinis
  • 1 large tablespoon breadcrumbs
  • 1 garlic clove
  • 15 g Parmesan cheese
  • 2 tablespoons olive oil
  • 1 lemon zest
  • Salt and pepper
  1. After washing and cutting the zucchini into French fries, set aside in a salad bowl.
  2. Mix the oil, grated garlic and lemon zest in a bowl and pour over the zucchini fries. Stir with your fingers until they are well soaked.
  3. Place on a baking sheet lined with baking parchment.
  4. In a separate bowl, mix together the breadcrumbs, Parmesan, salt and pepper, then sprinkle over your zucchini fries.
  5. Bake at 200°C for 10 to 15 minutes. Your fries should be golden brown and crisp. Serve.
